Meet our newest creation...the Berry Mont Blanc Tart!
Berry Mont Blanc Tart launches nationwide at all U.S. boutiques February 1st. It's our most colorful creation yet! This tart showcases a four berry mousse (made from strawberry, raspberry, blackberry, and black currant) plus a bold kiss of crème de cassis. In the tradition of Mont Blanc desserts, the mousse is piped over a billowing mountain of whipped cream and Lady M's crème d'amande. Baby pink macaron shells and snow sugar to finish.
Want to break down the details of this cake? Here we go:
- TART SHELL: First we have the tart shell. It's a classic tart shell, made with lots of butter, crisp and golden.
- CRÈME D'AMANDE: We then brush a layer of crème d'amande over the shell. Crème d'amande is a French almond cream filling. We made ours in-house (as we do everything) from ingredients like almonds, butter, eggs, and sugar. The almonds are ground very fine, and the filling is nutty and creamy in a most sophisticated manner. Crème d'amande has many uses (it also serves as the filling for almond croissants)... perhaps we will see more of this in our future desserts!
- WHIPPED CREAM: We love whipped cream at Lady M, especially when it's made from high quality cream and combined with commanding flavors like almonds and berries. The whipped cream makes up the height of this tart, staying true to the "mountain" design of Mont Blanc desserts.
- BERRY MOUSSE: Four berries are featured in this colorful mousse. Count them all: strawberry, raspberry, blackberry, and black currant. The mousse is piped over the surface of the whipped cream in the same manner as our Gateau Aux Marrons.
- MACARON SHELLS: These baby pink macaron shells come two to a slice and are made from fresh almond flour. We finish the tart with a dusting of snow sugar, and tadah, there is no better tart to brighten this winter chill.
Our Berry Mont Blanc Tart was created in partnership with Moulin Rouge! The Musical. An adaptation of Baz Luhrmann's iconic 2001 film, the show masterfully melds songs from various eras while staying true to the story’s heart: "The greatest thing you'll ever learn is just to love and be loved in return." Berry Mont Blanc Tart is more complex than many of our creations, combining five (tart shell, crème d'amande, whipped cream, berry mousse, macaron shells) very different elements in texture, color, and taste. We like to think it captures Moulin Rouge! The Musical's timeless values of "truth, beauty, freedom and – above all – love."
