Cakes to Celebrate the First Day of Spring

There's still a slight chill in the air, but the idea of Spring coming right around the corner (5:58pm EDT today, to be exact) has us very excited. We can't wait to peel off the heavy, dreary winter coats and change into bright layers of colors. Our cake cravings are the same: bright and cheery. Light and fun! Bring it on.
This gorgeous day brings Green Tea Checkers to mind.
Made especially for spring, Green Tea Checkers takes the chocolate cake elements of our standard Checkers cake and replaces them with green tea - sponge on the inside, and matcha-infused white chocolate to top. It's in boutiques only until the end of March!
If you're in the mood for something a bit more classic, you'll find it in our Strawberry Shortcake. This one is available year-round but we've always thought it carries a distinct spring element with that delicate sponge cake and the fluffiest whipped cream in town. It's a joy to devour.

Also a joy: Strawberry Mille Feuilles, which truly showcases the best of all worlds.
You get the whipped cream (most important!), and the vanilla spongecake, AND the million layers of puff pastry. It's like all the possible textures gathered into one brilliant bite. We whip a bit of kirsch into the whipped cream and you'll find little kisses of strawberry jam tucked throughout. It's a very loving cake.

Finally, if you come by the Bryant Park boutique, look out for our Green Tea Éclair, which is exclusive to this location. It's the most festive of all our éclairs, and we don't know anyone who would turn down that filling of green tea custard.

P.S. Our spring-iest option is headed to boutiques next month, but available for pre-order now: Strawberry Mille Crêpes. Made with fresh strawberries (of course), it's so pretty, a touch lighter than the Pistachio Mille Crêpes, and equally pleasurable. Plus all that fresh fruit makes it even feel a touch healthy.
