Pistachio Mille Crêpes, a Brand New Cake

Update, April 2019: Pistachio Mille Crêpes has been such a hit that we've decided to extend it in boutiques for another month.  (And if you're in Seattle on April 19-21, you have a chance to try it!)

It's not often we launch a completely new cake... but when we do, it's for a flavor that we really, really love. An unimaginable amount of brainstorming, collaboration, and testing goes into the development of every Lady M cake flavor. And this month we are proud to announce the launch of our Pistachio Mille Crêpes!

Every Lady M Mille Crêpes cake starts with the Signature Mille Crêpes, and from there we build, edit, add, and remove elements to create a new flavor. Chocolate Mille Crêpes blends cocoa into the crêpe batter and pastry cream. Green Tea Mille Crêpes has green tea folded into the pastry cream and is then dusted with matcha powder. It's a fine art, balancing the flavors of each cake.

For the Pistachio Mille Crêpes, we hand whip the finest pistachio paste into the layers of cream. This gives a distinct and nutty element to the cake. You can taste the pistachios so clearly, but the texture is smooth all the way through. It's a dream flavor pairing with our crêpes! Lacy and light, the cake is topped with a spin of pastry cream and an array of crushed pistachios.

This is the first time we've used pistachios in a cake, and we could think of no more wonderful way to introduce the ingredient. Pistachios are grown all over the world, and we recipe tested with over a dozen different types. We found that the pistachios grown here in California were the best fit (and we are delighted to support local). Did you know that 100% of all pistachios grown in the US are grown on the West Coast? Of that, nearly 99% of production comes from California. A fun tidbit for the week! We love the clean and pure taste of these pistachios. We love them blended into a paste for the pastry cream and we love it even more sprinkled on top for a final touch.

FYI, best tea pairing for this cake is our Sencha (or Mint-Verbena if you're looking for a caffeine-free option). Make sure to try a slice next time you're at the boutiques (or order a whole cake online for pick-up at any U.S. boutique).
